Ingredients
For the Crust
- 2 ½ cups all-purpose flour

- ¼ to ½ cup ice water
For the Filling
- 6-7 medium-sized apples (a mix of tart and sweet varieties like Granny Smith and Honeycrisp), peeled, cored, and thinly sliced
- ½ cup granulated sugar
- ¼ cup light brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cold and cubed
For Assembly
- 1 egg, beaten (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling on top)
Instructions
1. Prepare the Crust:
- In a large mixing bowl, combine the all-purpose flour, salt, and granulated sugar. Add the cold, cubed butter and work it into the flour mixture using a pastry cutter or your fingertips until it resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, mixing gently after each addition. Stop adding water when the dough starts to come together and can be pressed into a ball.
- Divide the dough in half, shape each half into a disc, wrap them in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling:
- In a separate bowl, combine the granulated sugar, brown sugar, all-purpose flour, cinnamon, nutmeg, vanilla extract, and lemon juice. Mix well.
- Add the thinly sliced apples to the bowl and toss them gently until evenly coated with the sugar and spice mixture.
3. Preheat the oven:
- Preheat your oven to 375°F (190°C).
4. Roll out the Crust:
- On a lightly floured surface, roll out one of the chilled dough discs into a circle large enough to fit your pie dish. Carefully transfer the rolled-out dough to the pie dish, gently pressing it into the bottom and sides.
